Ingredients:

  • 2 Cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • half teaspoon salt
  • half cup butter softened
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, smashed
  • 2 large eggs
  • 2 cups fresh blueberries

Step-by-Step Cooking Method:

  • Step 1: preheat the oven to 350 degrees F (175 degrees C). Then you can grease 3 mini loaf pans.
  • Step 2: then in a medium bowl, mix baking soda, flour, and salt together 
  • Step 3: beat butter and sugar with an electric mixer in a large bowl. You need to continue beating until light in color and fluffy.
  • Step 4: Then you need to add eggs, one at a time. After each addition mix well together. Stir in vanilla extract, and beat in mashed bananas.
  • Step 5: add flour mixture a little at a time, and you need to beat continuously until it becomes a thicker batter. next, fold in blueberries until evenly distributed.
  • Step 6: Then pour the batter into the prepared loaf pan. 
  • Step 7: Then bake in the preheated oven. After 30-35 minutes, you need to insert a toothpick inside the banana and blueberry loaf. If you find the center of the toothpick comes out clean then the cake is prepared. Otherwise, bake for another few moments.
  • Step 8: lastly cool the loaves in the pan for another 10 minutes. then transfer the loaves become cool completely on a wire rack.
